Dice onion and garlic and remove skins of sausages
When water is boiled, add pasta and cook as per packet instructions minus one minute. (If packet says 11 minutes, cook for 10 minutes).
Preheat another large, heavy bottom pot over high heat. Add oil when hot.
Add sausages and allow to fry for approx 2 minutes before starting to break them down. Cook sausages until cooked through only disturbing them to break them up further every few minutes. They should be disturbed a total of 3 times. This will help develop the crust at the bottom. Remove sausages from pan and set aside when cooked.
Reduce heat to medium and add onions with a pinch of salt. Cook until translucent stirring often (approx 5 minutes).
Add garlic and cook for a further 2 minutes, stirring often.
Add remainder of spices and cook for 30 seconds or until fragrant.
Add white wine and cook for one minute, scraping all the fond off the bottom of the pan.
Add tomatoes and 3/4 cup of water. Mix well.
Bring to a boil and then reduce to a simmer. Cook until sauce is thickened, approx 11 minutes.
Add 1/4 cup of pasta water to the sauce just before pasta is cooked.
When pasta is cooked add straight into the sauce mixture and continue to cook over low heat mixing thoroughly and sauce is thickened.
Divide into meal prep containers and enjoy your week!
