Ingredients
  • 4 rashes streaky bacon (cut into lardons)
  • 1 brown onion (diced)
  • 1/2 red capsicum (diced)
  • 2 garlic cloves (minced)
  • 1 1/2 tsp clarified butter or vegetable oil (high smoke point)
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp paprika
  • 1/2 tsp tumeric
  • 1/2 tsp cayenne pepper (adjust according to spice level)
  • 1 tsp salt
  • 1 tsp oregano
  • 1 can crushed tomatoes
  • 3/4 cup water (200ml)
  • 4 eggs
  • feta (for serving)
  • coriander (for serving)
Instructions
  1. Prep bacon, onion and garlic as per ingredient list

  2. Heat a wok or large pan over high heat. Add butter or oil and melt. Add cumin and mustard seeds and cook till colour deepens (approx 45 seconds).

  3. Add onion and bacon with a pinch of salt. Cook for 5 minutes stirring often.

  4. Add garlic and cook for 30 seconds.

  5. Add remaining spices and cook for 30 seconds or until fragrant.

  6. Add tomatoes and water. Mix well. Bring mixture to a boil and then reduce down to a simmer. Cook until thickened - approx 9 minutes.

  7. When mixture is thickened, create 4 wells in the sauce with a spoon - crack an egg into each of the well and season lightly with salt. If any egg shell falls in, scoop this out with the other part of the egg shell.

  8. Place a lid on and cook until the tops of the eggs are just set.

  9. Serve and top with feta and coriander if using.

  10. Enjoy!
