Ingredients
  • 1 cup flour
  • 1 cup rolled oats
  • 1/2 cup white sugar
  • 1/3 cup brown sugar
  • 1 cup coconut
  • 2/3 cup butter
  • 1/3 cup golden syrup
  • 4 Tbs water
  • 1 tsp vegemite
  • 1 tsp  baking powder
Method
  1. Preheat oven to 160c.

  2. Combine flour, sugars, oats and coconut in a large bowl and mix.

  3. Whisk together water and baking powder. Add vegemite and whisk until there is no lumps left. The baking powder might foam up here - this is normal.

  4. In a saucepan over medium heat, melt butter with golden syrup. Mix frequently.

  5. Add vegemite mixture - if baking powder didn’t foam up before then it will here. Remove from heat immediately and pour onto dry mixture.

  6. Mix with a spoon until dry ingredients are hydrated but don’t over mix.

  7. Lightly grease a baking try with a tiny dollop of butter.

  8. Using a tablespoon, scoop batter and roll into a ball with your hands then flatten into disks. 

  9. Cook in oven for 14 minutes or until lightly golden brown. Don’t over cook - biscuits will continue to cook slightly once removed from the oven.

  10. Allow to cool on wire rack for 30 mins.

  11. Enjoy!
